AVOCADO CHOCOLATE PUDDING
This is a rich-tasting, super-creamy “instant” chocolate pudding a try! a popular treat among vegans, this unusual combination of ingredients is becoming more mainstream every day! it contains healthy fat and a ton of fiber from the avocados, antioxidants from cocoa powder, and is free of refined sugars.
WHAT YOU NEED:
2 large RIPE avocados (about 2 cups)
6 tbsp unsweetened raw cocoa powder
5 tbsp pure maple syrup
1/4 cup water, milk, almond milk, coconut milk, cashew milk etc.
1 tsp vanilla
pinch fine sea salt
WHAT YOU DO:
place all ingredients into a food processor or blender and whirl until PERFECTLY smooth. you may need to add a bit more liquid if pudding is too thick. taste and add more maple syrup (or stevia like me) if desired. pudding is ready to eat immediately but tastes best COLD.
*chilling for an hour really makes a difference.. if you can manage to keep your hands off for that long, I threw mine in the freezer to speed up the cooling process
may be stored for up to 24 hours in refrigerator.
1) add 2 to 3 tbsp natural peanut butter or almond butter. you might need to add a bit more liquid if the pudding is too thick.
2) add ½ a ripe banana
3) add a touch of grated orange zest
4) mix in fresh berries such as strawberries
